Endive a la Dijon Salad



     Here is a wonderful salad for your Easter table that is just as delicious as it is beautiful. It’s a snap to make leaving you plenty of time to spend with those you love.


Mix:

  • 2 Belgian (French) endives, cut up as desired
  • ½ cup sliced celery
  • ¼ cup sliced scallions
  • Topping:
  • 4 tbsp crumbled blue cheese
  • Fresh parsley, chopped
  • Raw and hulled sunflower seeds

Vinaigrette
Mix:

  • ¼ cup Dijon mustard
  • ½ cup balsamic vinegar
  • 1/8 cup minced shallots
  • Salt and pepper to taste


Alternative salad topping -- feta cheese, Craisins, and toasted walnuts.
