Endive a la Dijon SaladHere is a wonderful salad for your Easter table that is just as delicious as it is beautiful. It’s a snap to make leaving you plenty of time to spend with those you love.
Mix:
- 2 Belgian (French) endives, cut up as desired
- ½ cup sliced celery
- ¼ cup sliced scallions
- Topping:
- 4 tbsp crumbled blue cheese
- Fresh parsley, chopped
- Raw and hulled sunflower seeds
Vinaigrette
Mix:
- ¼ cup Dijon mustard
- ½ cup balsamic vinegar
- 1/8 cup minced shallots
- Salt and pepper to taste
Alternative salad topping -- feta cheese, Craisins, and toasted walnuts.
