Turkey Fried RiceA recipe to help with leftover holiday turkey that the whole family will love.
In large skillet (I use a wok type skillet) heat oil. Then add garlic, scallion, soy sauce and eggs. Stir until eggs are well cooked, about 3 to 4 minutes. Mix in turkey and cooked rice (snow peas optional). Continue cooking about 4 to 5 minutes until all ingredients are heated thoroughly.
This is also a great recipe to use with leftover rice or chicken instead of turkey.
Ingredients:
- 1 tbs canola oil
- 2 cloves garlic
- 2 cups cooked brown rice
- 1 medium scallion (optional)
- 1 tbs soy sauce (or more, based on your liking)
- 3 large eggs
- snow peas (optional)
Makes 3-4 servings.
