Cranberry Chutney(adapted from a Martha Stewart recipe)
Ingredients:
- 3 cups fresh cranberries
- 1 cup sugar
- 3 firm pears or granny smith apples or a mixture of both
- 1 tbsp. lemon zest
- 1 tbsp. lemon juice
- 1/2 cup orange juice
- 1/4 cup golden raisins
Directions:
Peel and cube pears and/or apples, small cubes, place in med. bowl and toss with lemon zest and juice; set aside. Combine cranberries and sugar in medium sauce pan, low heat until berries begin to open and release their juices. (Approx. 8 min., don't rush this part!) Add orange juice and raisins to cranberry mixture, raise to med. heat, and stir. When boiling occurs, add pears and apples, cook and stir until thickened. Reduce heat to low and cook until pears and apples are red and cooked thoroughly. (Approx. 10 min.) Refrigerate 24hrs.
Delicious, and better than anything you've ever eaten from a can!
