Bacon Wrapped Turkey BreastsIngredients:
- 2 turkey breasts
- 2 packages of thick sliced bacon
- 4 to 6 fresh sage leaves, finely chopped
- Leaves from two stems of fresh rosemary, finely chopped
- Grated zest from one orange
- 2 tsp. sea salt
- 1 tsp. freshly ground pepper
- Cheese cloth and butchers twine
- Non-stick cooking spray
Preparation:
Butterfly turkey breasts and pound with mallet to even thickness. Combine sage, rosemary, orange zest, salt, and pepper in small bowl. Rub dry mixture evenly over turkey breasts. Do this for each breast: On counter top, lay out cheese cloth, size to larger than breast size, and lightly spray with a non-stick cooking spray. Place bacon, slightly overlapping edges, in a column down the center of the cheese cloth. Roll turkey breast into a tight roll and place in the center of the bacon. Braid bacon back and forth, from side to side, over the top of rolled turkey breast. Wrap turkey breast with cheese clothe and tie tightly with butcher's twine at ends and in middle. Roast at 375 degrees; time varies due to breast size. Turkey should be cooked to an internal temperature of 165 degrees, use oven-safe thermometer to check. Medium breasts take approx. 90 min. Remove from oven and let rest for 15 min. Unwrap and slice to serve.
