Pumpkin Bread
Ingredients:
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs, lightly beaten
- 16 ounces canned unsweetened pumpkin
- 3 1/2 cups flour
- 2 tsp. salt
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. allspice
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 2/3 cup water
Preparation:
Preheat oven to 350 degrees. Butter and flour 2, 9X5, loaf pans. In large bowl, stir sugar, oil, eggs, and pumpkin together. Combine dry ingredients in separate bowl. Alternate blending of dry ingredients and water into wet mixture. Divide batter evenly and bake for 40 to 50 minutes until cake tester comes out clean. Let cool for 10 minutes, remove from pans, and wrap in plastic wrap to prevent drying out.
