Grandma Ursula's Gandule Rice




Ingredients:

  • 4 to 6 ham hocks (depending on size)
  • 1 large onion (diced)
  • 5 stocks of celery (chopped)
  • 1 can of gandule beans also called pigeon peas
  • 1 can of tomato sauce
  • 7 packets of Sazon seasoning (con culantro y achoite)
  • 7 cups of rice (washed)

Directions: Grandma Ursula's Gandule Rice
      In pressure cooker (45 min.) or crock-pot (overnight) add ham hocks, onion, and celery. Cover with water and cook. Discard fat and bone.  Chop up remaining meat.  There will be very little meat but all the flavor is in the broth. Add chopped meat, undrained gandule beans, tomato sauce, Sazon seasoning packets, and washed rice.  Stir and bring to a boil.  Turn down to medium heat stirring continuously so rice won’t stick to the bottom of the pot.  When moisture is mostly gone, turn heat to low, cover and stir occasionally until rice is tender throughout.  Should make enough for a large family gathering.
