Red Velvet Cake



My Friend Debbie      What a great way to celebrate Valentine's Day for the ones you love this year--with a delicious Red Velvet Cake! Pull out some white doilies and red curly ribbon and you have a centerpiece!

     This recipe has been in my family for as long as I can remember. My mom always made it and we all loved it. It is very delicious if you don't over bake it, leaving the cake nice and moist. If you have a nut allergy, you can opt to leave off the pecans, but otherwise they make a great addition to the rich cream cheese icing. Beware--this cake is NOT on the "inexpensive-to-make" list. I remember that it costs about $10 to make--and that's before things got so much more expensive. However, it does show well, taste fantastic and will be a great way to celebrate Valentine's Day!

Ingredients:

  • 1 1/2 cups sugar

  • 1 1/2 cooking oil

  • 2 eggs

  • 1 tsp. vinegar

  • 1 oz. red food coloring (1 bottle)

  • 2 1/2 cups plain flour

  • 1 tsp. baking soda

  • 2 Tbsp. coca (or 4 to taste)

  • 1 cup buttermilk

  • 1 tsp. vanilla
Directions:

     Cream sugar and oil; add eggs and beat well. Sift dry ingredients. Add, alternating with milk. Add vanilla; beat well. Or mix all ingredients at once. Pour into cake pans. Bake at 350 degrees for 30 minutes.

Icing

Ingredients:

  • 1 box powdered sugar

  • 8 oz. cream cheese

  • 1 stick margarine

  • 1 tsp. vanilla

  • 1 cup pecans
Directions:

     Melt margarine and let stand, while baking cake. Cream cheese and sugar; and margarine, pecans and vanilla. Spread over the cake and Enjoy!
