Spamalicious



     It’s all right there in the title, and yes, it says, “Spam.”  Don’t be afraid.  My mother’s family comes from Hawaii where spam is served in only the finest self-respecting restaurants. You can even order a spam sandwich from Mc. Donald’s in Hawaii. If you have never tried spam, don’t knock it until you have. It is meat made from pork and chicken and is very tasty.
          This is a cheap, fast, and easy recipe that will satisfy even the pickiest of palates.  This should take under 30 minutes to prepare and your family will be full and pleasantly delighted.  In fact, I recently had an 11-year-old boy over for dinner, one of my son’s best friends, and a very picky eater.  He had never had spam but was willing to try.  He absolutely loved it and renamed this recipe, “Spamalicious”!

Ingredients:

  • 1 large onion
  • 4 large potatoes
  • 2 cans of spam
  • Olive oil
  • Soy Sauce
  • Onion powder
  • Pepper
  • Cooked Rice


Directions:
    Slice onion into 1/4 inch slices.  Cut potatoes and spam into 1/2 inch rectangular cubes, approx. one inch to an inch and a half in length.  Put a small amount of olive oil in a pan on medium heat and fry potatoes and spam until they begin to turn slightly brown, approx 8 to 10 minutes.  Add onion and cook until transparent and soft.  Add a couple tbsp. of soy sauce and a sprinkle of onion powder and pepper to taste.  This recipe does not need any added salt because the spam is very salty and the soy sauce will be enough.  Place onto a bed of freshly cooked white rice and savor.
