Easy Hummingbird CakeIngredients:
Cake:
- 1 box spice cake mix
- 100 grams sugar
- 3 large eggs
- 3/4 cup sunflower oil
- 8oz can crushed pineapple with juice
- 1 1/2 tsp vanilla
- 2 mashed bananas
- 1 cup chopped pecans
Icing:
- 1 8oz of cream cheese softened
- 1/4 cup butter softened
- 3 cups powder sugar sifted
- 1 tsp vanilla
- 1/2 cup chopped pecans
Directions:
For cake:
- Preheat oven to 350.
- In one bowl, stir cake mix with 100 grams of sugar.
- In second bowl mash bananas and then mix in all other wet/liquid ingredients.
- Gently add the liquid ingredients in with the dry ones, stir until combined well.
- Bake in two non-greased 9 -inch round pans for approx 25 minutes. Watch closely.
- Remove from oven, let sit for 5 minutes and then invert on a cooling rack.
- Once completely cooled you can icing cakes. Remember when you are stacking cake layers, always turn your bottom layer upside down.
For Icing:
- With an electric mixes cream cheese and butter, add in vanilla and then slowly add powdered sugar.
- Once all creamed well, stir in pecans.
- Refrigerate for 1 hour so icing can set.
