Beef Cube Skillett MealThis is one of our weekly meals. It is an easy 30-40 minute meal to prepare. If you have a "meat and potatoes" family, this should be a hit. It is also what I call a "skillet meal" because all but the potatoes are prepared in one large skillet. The meat mixture has its own sauce or "gravy" and it is filled with pepper strips and tomato. This is served over cubed potatoes and makes a hearty winter meal.
Ingredients:
- 1 ½- 2 lbs beef cubes (stew beef)
- 2 Tablespoons olive or vegetable oil)
- ½ teaspoon salt or seasoned salt)
- ½ Tablespoon onion powder )
- 1 clove garlic (minced or through a garlic press) )
- 2 cups beef broth (I use Frontier brand beef broth. It is vegetarian but it has corn syrup solids in it and other yummy ingredients. Do not use low sodium, bland broth). )
- 2 Tablespoons Worcestershire sauce)
- 1 red pepper (can also use yellow or orange - green peppers are great for color but tend to get bitter when leftover or if cooked too long). Cut into strips. )
- 3 Roma or plum tomatoes sliced (not thin slices or it will get mushy) )
- ¼ cup cold water and 2 Tablespoons cornstarch)
- Cubed potatoes (boil in a separate pan and serve meat mixture over potatoes) )
- Sour cream (dollop of sour cream for topping, optional) )
Directions:
- Lightly brown beef cubes in oil in large skillet. Season with salt and onion powder. Cover skillet and allow cubes to cook on low. Do not fry the beef cubes or the beef will be tough. Here is a great place to start boiling the cubed potatoes in a separate pan.
- Add the minced garlic to the meat mixture and lightly sauté.
- Add beef broth and Worcestershire sauce to meat mixture. Simmer until beef cubes are done.
- Add pepper strips to meat mixture, cover, and simmer for 3 minutes
- Combine cornstarch and ¼ cup cold water. Stir into meat mixture. Cook, stirring constantly until sauce thickens and begins to boil.
- Add sliced Roma tomatoes and heat through.
- Serve over cubed potatoes (for a lighter version, serve over egg noodles or rice)
- Optional - add a dollop of sour cream when serving (my husband doesn't like sour cream and the dish tastes fine without it. My girls and I love sour cream and find it makes the dish taste even better).
* Tip: If you have time, for very tender beef cubes you can prepare the beef cubes in your crock pot by simmering in beef broth for a few hours until done. This makes for tender beef and great, seasoned broth too! Just strain the broth and do not brown the beef cubes in the skillet. Instead, just transfer beef cubes and broth to skillet and begin at step #2 above.
