Baked Potato SoupIngredients:
- 8 large baking potatoes
- 1 stick butter
- 2/3 cup flour
- 6 cups milk
- ½ t pepper
- 4 cups shredded cheddar cheese
- 4-6 green onions, chopped
- 1 (16 oz) carton sour cream
Directions:
- Wash potatoes, prick with fork, place in oven at 400 degrees for 1 hour.
- After cooled, cut potatoes and scoop out filling.
- Melt butter in large soup pot on low.
- Add flour and stir until smooth.
- Add milk, potatoes, pepper, cheese, and green onions. DO NOT BOIL.
- Stir in sour cream.
