Chocolate Cake: The Way it Should Be!Ingredients:
- 2 c sugar
- 1 c water
- 2 c self rising flour
- 1 tsp baking soda, dissolved in
- 1 stick butter, softened
- 1/2 c of buttermilk
- 1/2 cup oil
- 2 eggs
- 4 tbs cocoa powder
- 1 tsp vanilla
Directions:
- Preheat oven to 300F.
- Grease 9x13 pan with shortening.
- Bring water to a boil.
- Add to first five ingredients.
- Mix well with electric mixer.
- Add the remaining ingredients.
- Mix well.
- Bake 35-45 minutes(watch carefully to not over bake, when toothpick inserted in middle comes out clean, its ready).
- Pour frosting over cake and return to oven for 5 minutes.
Frosting:
- 1 box powdered sugar
- 6 tbs buttermilk
- 1 stick butter
- 1 tsp vanilla
- 4 tbs cocoa powder
- 1/2 c chopped pecans
Directions:
- Sift the powdered sugar in mixing bowl.
- Bring to a boil the butter, buttermilk and cocoa.
- Pour hot mixture over powder sugar and stir well.
- Mix in the vanilla and pecans.
- Pour over hot cake and return to oven for 5 minutes.
