Sweet Potato MuffinsIngredients:
- 1 cup cooked, mashed sweet potatoes (approx. 2 large sweet potatoes)
- 1 ½ cups whole wheat flour
- 2 ¼ tsp baking powder
- ¾ tsp salt
- 1 cup sugar
- ½ tsp cinnamon
- 2 eggs
- ¾ cup canola oil
- ½ cup chopped walnuts or pecans
Directions:
- Preheat oven to 350 degrees.
- In large bowl, combine sweet potatoes, flour, baking powder, sugar, cinnamon, and salt.
- Add eggs and oil, blend well.
- Stir in nuts.
- Pour batter into greased muffin tin until ¾ full.
- Bake 15 minutes, or until springy.
- Makes 1 dozen muffins.
