Church WindowsThese are a cross between a cookie and a candy. They are a festive addition to a holiday cookie tray. I also keep a couple of rolls of the Church Windows in the refrigerator for unexpected guests. The mixture lasts a long time.
Ingredients:
- 12 ounces chocolate chips
- 1 stick butter or oleo
- 1 10 ½ oz. package miniature colored marshmallows
- Prepare 4 sheets of waxed paper, roughly 12 x 12 inches each. Set aside.
- Melt chocolate and butter in large dish in microwave. Try this in 30-second intervals. Stir chocolate and butter each time you check. Microwaves vary so much that you just have to watch the mixture. You want the chocolate melted but not bubbling. Cool to lukewarm. (If it gets too cool, it will not mix properly.)
- Fold marshmallows carefully into the chocolate mixture. You want the marshmallows to be coated in chocolate but not beaten into the mixture.
- Divide the mixture into four parts. Place ¼ of the mixture in the middle of one of the waxed paper sheets. Fold the paper over the mixture and form it into a log about 2 inches in diameter.
- Repeat for the remaining three parts.
- Chill in refrigerator for 24 hours. At serving time, slice into ¼ inch slices.
- Store in refrigerator.
Variations:
- Mix in 1 cup chopped nuts with the marshmallows.
- Roll mixture in flaked coconut if desired.
- Roll mixture in FINELY chopped nuts if desired.
