Eggs with Macaroni and Cheese
One of my favorite things about my childhood was the creative things my mother would do with food!! She could always whip up something to eat--and fast!! She also had the amazing ability to make something to eat out of whatever we had on hand! If she was short on some things, she would add other things and "voila" there was a new tasty dish created and it looked like she had planned it all along!! Mom’s kitchen was always full of delicious flavors!!
One of my favorite "creative" dishes that my mom made was scrambled eggs with left-over macaroni and cheese. She would stir in however much macaroni and cheese we had into the skillet that she was scrambling eggs in—add a little salt and pepper—and we had a meal made in heaven!!.
Now, for my own children, we make the same thing—and I still love it!! So, if you’re looking for a quick meal and a great use of some leftovers, try this helpful tip!
