Coconut PieFilling Ingredients:
- 1 c. Milk
- 1 c. Sugar
- 3 Eggs Yolks (save whites for meringue)
- 2 T. Cornstarch
- 1 tsp. Lemon Flavoring
- 1 c. Coconut, shredded
Filling Directions:
- Over low heat, eggs yolks and milk
- Add in sugar and cornstarch
- Cook until thick
- Remove from heat and stir in the lemon flavoring and coconut
- Pour into baked pie shell
Meringue Ingredients
- 3 egg whites
- 3 tsp. sugar
- 1 tsp. Lemon flavoring
- 1/2 c. Coconut, Shredded
Meringue Directions:
- With electric mixer beat egg whites, sugar lemon flavoring until stiff peaks form
- Pour over pie filling
- Sprinkle with coconut
- Bake until top is golden-brown
